This week, a recipe to celebrate Cinco de Mayo. But it’s a Numero Uno favorite any time of year!

Easy to prep for you, and easy to please your players. Adjust the heat to taste and multiply the recipe to feed as many as needed.

BAKED SALSA VERDE CHICKEN 

Serves 4 (or 2 hockey players)

1 bottle (16-oz) salsa verde (mild, medium, or hot)

4 large boneless, skinless chicken breasts

1 T. olive oil

1 t. garlic salt

1/4 t. pepper

1/4 t. cumin

1-1/2 c. shredded Monterey Jack cheese

2 T. cilantro, chopped

Cooked brown rice

Heat oven to 400° and lightly coat a casserole dish with cooking spray. Pour salsa verde into dish.

Brush each chicken breast with olive oil. Combine spices and sprinkle over chicken, both sides. Nestle chicken in sauce and bake 30-40 minutes until cooked through.

Change oven temp to low broil. Sprinkle chicken with cheese, return to oven for 4-5 minutes or until cheese is bubbly and lightly browned. Top with cilantro and serve over rice.
